Although I don’t [yet] have this problem, when I have an excess of aubergine I know just what to do.

And that’s making this excellent eggplant caviar. Roasting the eggplant on the top of the gas stove or on a grill so the skin is well blackened prior to baking gives it a great smoked flavor.  So does a dash or two of smoked paprika from Penzy’s Spices. Best to use the full size eggplants for this recipe, and adjust ingredients to your taste ( I omitted the parsley and added extra olive oil, salt).
